I have a thing for tiny foods. Not only are they absurdly cute, but I am also utterly convinced they taste better than their larger counterparts. A slice of blueberry pie is great, but a golden crunchy bite-sized Air Fryer Blueberry Hand Pie is so much better. Who’s with me?
And the fact that I can make them using my beloved air fryer means I can enjoy scrumptious vanilla sugar fruity pastries in a fraction of the time baking a traditional pie requires.
And since this air fryer hand pie recipe is much healthier than frying them in tons of oil, it is a perfect kid-friendly breakfast or after-school snack. My mini chefs love helping me make these blueberry hand pies too. Getting to crimp the edges to seal the pies is their very favorite part.
Air Fryer Blueberry Hand Pies
- 1 cup (128g) blueberries
- 2.5 tbsp caster sugar
- 1 tsp lemon juice
- 1 pinch salt
- 14 ounces (320g) refrigerated pie crust or shortcrust pastry roll
- vanilla sugar to sprinkle on top (optional)
First mix together the blueberries, sugar, lemon juice, and salt in a medium bowl.
Then roll out the piecrusts (or shortcrust pastry roll) and cut out 6-8 (4-inch) individual circles.
Put about 1 tablespoon of the blueberry filling in the center of each circle.
After Moisten the edges of the dough with water, and fold the dough over the filling to form a half-moon shape.
Using a fork, moderately crimp the edges of the piecrust together. After cut three slits on the top of the hand pies.
Spray the hand pies with cooking spray and sprinkle with vanilla sugar (if using).
Preheat the air fryer to 350F / 180C.
Put 3-4 hand pies in a single layer inside the air fryer basket.
Cook for 9-12 mins, or until golden brown.
Finally, let the pies cool for at least 10 mins before serving.
